Perfect Summer Toast

On the menu tonight:
{and it's just too good not to share}

Hummus Avocado Toast 
with Roasted Tomato

*Healthy
*Easily made to be gluten-free
*No dairy required
*Vegetarian friendly




Ingredients:
Bread- any type your prefer
Hummus
Avocado
Salt + Pepper
Tomato
2 tblsp extra virgin olive oil
2 tsp balsamic vinegar

Directions:
-Preheat the oven to 450 degrees F.
-Arrange the tomatoes on your baking sheet, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Roast for 25-30 mins.
-While the tomatoes roast, toast your bread. Using a cookie cutter or circular object, cut out 1-2 circles per toast, depending on how big the piece of bread is.(optional).
-Spread ½-1 tablespoon of hummus on each circular toast.
-In a bowl or plate, mash avocado with a fork, leaving large chunks.
-Layer the mashed avocado over hummus, season with salt + pepper, and then top with a roasted [or fresh] tomato.
-Serve immediately.

Optional: top with goat cheese or feta or serve on the side.
     

Lesson.

First lesson of the summer learned:

There's no denying that Elie Saab designs gowns that make woman feel pretty special. The detail into each piece is exquisite. Celebs like Emma Watson, Mila Kunis, Taylor Swift, Catherine Zeta-Jones, amongst others movie stars and royalty choose Saab's gowns to wear to many red carpet events and awards shows. And there is certainly no question why.

Elie Saab, debuted his Elie Saab Haute-Couture collection for Paris Fashion Week Fall/Winter 2012/2013 at the Pavillon Cambon Capucines on Wednesday, July 4.

The colors are majestic. Cream, powder blue, teal, olive. There are hints of metallic  embellishments and beautiful flowing fabric. I could barely find one I wasn't in love with.

The Fall 2012 line for Melanie Auld Designs is truly something special. Talk about making a gal feel beautiful! These stunning sparklers are the perfect way to add a little, "WOW!" to any outfit. I am still obsessing over the druzy, over the perfect amount of bling, and over the fact that when I truly think I've seen the best of the best- Mel comes out with something new that knocks my socks off!

I have always had a hard time describing to people how I do the perfect top knot. You know- the perfect amount of imperfect, the exact height needed to make it work. Simple, easy, always aiming for that, "just threw it up there" look. I wasn't surprised when I headed over here this weekend and found the perfect tutorial.
